Johnny Cakes
Fried dumplings that are crisp outside and soft inside. Good with fish or for breakfast.

Ingredients
- 2 cups all-purpose flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons butter, cold
- 3/4 cup water, or as needed
- 1/2 cup oil for frying
Steps
Step 1. Mix the flour, sugar, baking powder, and salt. Rub in the butter.
Step 2. Add the water slowly to make a soft dough. Knead for 1 minute and rest 10 minutes.
Step 3. Divide into 8 balls and flatten to 1/2 inch thick.
Step 4. Fry in the oil over medium heat for 3 to 4 minutes per side until deep golden. Drain.
