Gulab Jamun
Soft milk-dough balls fried until golden and soaked in cardamom and rose syrup.

Ingredients
- 1 cup milk powder
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 2 tablespoons ghee, melted
- 1/4 cup warm milk, plus more as needed
- 3 cups oil for frying
- 1 1/2 cups sugar
- 1 1/2 cups water
- 4 cardamom pods, crushed
- 1 teaspoon rose water
- 1 tablespoon lemon juice
Steps
Step 1. Simmer the sugar, water, and cardamom for 8 minutes. Add the rose water and lemon juice. Keep the syrup warm.
Step 2. Mix the milk powder, flour, baking powder, and ghee. Add the milk a little at a time to form a soft, smooth dough. Do not knead hard.
Step 3. Roll into 16 smooth, crack-free balls about 1 inch wide.
Step 4. Heat the oil to 275°F, low enough to cook them slowly. Fry in batches for 8 to 10 minutes, turning, until deep golden brown all over.
Step 5. Drop the hot balls into the warm syrup and soak for at least 1 hour before serving.
